Nutella Chocolate Chip Spent Grain Cookies

First inspired to use Spent Grains in cookies with the success of Choco-Chip Spent Grain Pumpkin Cookies, I quickly moved onto Peanut Butter Spent Grain Cookies. But these, my friends...these are the end all, be all of Spent Grain cookies and I don't know if another Pumpkin or Peanut Butter cookie will find it's place in our 'cookie jar.' Nutella is just too magical. And chocolate chips are always a plus.

Ingredients/Directions:

Preheat the oven to 350 Fahrenheit (177 Celsius) Combine 2 sticks butter, 1 cup brown sugar and 3/4 cups white sugar until fluffy. Add 3/4 - 1 cup Nutella depending on flavor preference, 2 eggs and 1 tsp. vanilla and beat until combined. Add 1 1/2 cups flour, 1 tsp salt, and 1 tsp baking powder. Stir in 3 cups of Spent Grains (drained of moisture to the best of your ability). If the dough is too wet and sticky at this point (because generally spent grains hold a bit of moisture) add some flour and mix until you acquire a dough that can hold it's shape and isn't too wet, I usually add an additional 1-2 cups of flour. Next stir in at least 1 cup of chocolate chips and plop dough onto a greased cookie sheet and bake 12-15 minutes until golden brown and beautiful. This always makes a huge batch of dough, so it's also nice to simply freeze pre-made balls of dough so you can enjoy warm, chocolaty cookies any night of the week.

Nutella Oatmeal Banana Bread

Well...I wanted banana bread. Wanted the joy of Nutella IN my banana bread. AND wanted to make a recipe from one of my Kindle Cookbooks...because it makes me feel cool, and happy to have a Kindle with Cookbooks.  Because I love Cookbooks.  And every cookbook on my Kindle was free.  And I really love free.

So from the 'pages' of the Gooseberry Patch Thanksgiving Cookbook (cooklet) comes Banana and Walnut Bread minus the Walnuts and Blueberries, plus Nutella.

Ingredients/Directions:

In a large bowl cream together 1/2 cup Butter and 1 cup Sugar.  Add 2 Eggs, one at a time and mix well after each addition; stir in 1 cup of Mashed Banana.  In separate bowl (or not, depending on your perfectionist streak) sift together 1 1/2 cups Flour, 1 tsp. Baking Soda, 1/4 tsp. Salt and 1/4 tsp. Cinnamon.  Fold in 1/2 cup Quick-Cooking Oats (uncooked).  Mix dry with wet if necessary, just until moistened.  Pour half the batter into a greased bread loaf pan, plop in 2-3 spoonfuls of Nutella, swirl, pour in rest of batter, plop in 2-3 more spoonfuls of Nutella, swirl and bake. 350 degrees for 50-55 minutes until center is done. Enjoy with a glass of milk, for breakfast and/or dessert and/or after-school snack.

Nutella Mug Cake

Want dessert in 5 minutes or less? Well, here it is! Wait no longer! This gem is not really my brilliant creation, the original recipe is here...but just in case you happend by 519 Kitchen first, I'm happy to share the recipe with you ^.^

Ingredients/Directions:

In a large coffee mug whisk together: 4 Tbsp. Self Rising Flour (or AP Flour with a sprinkle of Baking Powder and Salt...to make your own Self Rising Flouth use the ratio: 1 cup Flour + 1.5 tsp. Baking Powder + 1/2 tsp. salt), 4 Tbsp. Sugar, 1 Egg, 3 Tbsp. Cocoa, 3 Tbsp. Nutella, 3 Tbsp. Milk and 3 Tbsp. Olive Oil. Throw it into the microwave for anywhere between 30 seconds and a minute and a half...keep an eye on it! Mine GREW and almost left the coffee mug. ENJOY!!! It's a rather large helping of cake, but it's delicious, so just eat it (or pawn it off on the hubs).

Nutella Banana Bread

Favorite Banana Bread Recipe.

Nutella.

Half the batter.

Few spoonfuls of Nutella. Swirl.

Repeat.

Bake.

Devour.
